Fried zucchini and tzatziki for aperitivo! A crunchy, light-as-air, and addictive little snack that tastes just perfect with homemade tzatziki. Add a glass of cold wine and you’ve got the perfect happy hour. For the tzatziki: 1 large persian cucumber, grated (you want about 1/2 cup grated cucumber) 1 cup Greek yogurt 1 garlic clove, finely chopped or microplaned 2 tbsp finely chopped dill 1 tbsp lemon juice salt Line a colander with a clean towel or paper towels and add in the grated cucumber. Gather the cucumber in the towel or paper towels, and then squeeze out as much water as you can. Add cucumbers to the Greek yogurt along with the rest of the ingredients and a pinch of salt and mix. Taste, and add more salt if desired. Set aside. For the fried zucchini: 2 zucchini (about 1 lb total), thinly sliced (I used the 4.5mm setting on my mandoline) 1 cup flour 1 1/3 cup soda water 1 tsp dried oregano salt and pepper Neutral oil for frying In a medium bowl, whisk together the flour, soda water, and dried oregano, and season with salt and pepper. Heat a couple inches oil over medium to medium-high heat in a large, heavy-bottomed pan. Once oil is hot (you can use a droplet of the batter to test the oil), dip a handful of zucchini slices in the batter then transfer one by one to the oil, using either tongs or a fork. Working in batches, fry until golden brown, about 3 minutes depending on how hot your oil is, then flip and fry until the second side is golden brown. Remove to either a paper towel-lined plate or a cooling rack set over a baking sheet. Season with salt. Serve the fried zucchini warm with tzatziki on the side. the perfect dessert for spring 🍋 These are so easy to make and always a favorite! Ingredients: 8 lemons, sliced in half and scooped out 3 cups heavy cream 3/4 cup granulated sugar Zest from 1 lemon 12 tbsp lemon juice 1 tsp vanilla extract Rinse and soak lemons throughly. Slice in half and scoop out using a spoon. Use a sieve to juice the scooped-out lemon and reserve for later. In a saucepan over medium heat, bring the heavy cream, sugar, and lemon zest to a low boil. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat. Stir in lemon juice and vanilla extract, and mix well. Strain the mixture through a fine mesh sieve to remove all of the zest. Allow cream to cool for 10 minutes before pouring into your lemon cups. Wanted to try this out for myself because I see this comparison so much (I know there are going to be major differences between a $180 camera & a $700+ dollar one duh) This is going to be a hot take because I hear that these are comparable A LOT but I am not crazy about the FZ55 and it’s not because I have the G7X now 😭 it is a good camera and especially for the price.I just have some older Coolpix and Powershots that take better pics. Would still highly recommend but it’s just not for me 😖 (idk if the camera is defective but all of my pictures keep turning out very dark no matter the settings) . . On the other hand, the G7X irritated me when I first brought it home because the settings are so intimidating but I have to give 10’s when they are due!! She’s definitely worth every penny if you’re looking to make that purchase as an investment, especially if you want to make more high quality content. Love her. Will never look back! . .
