BROWN BUTTER CHOCOLATE CHIP CRUMB LOAF CAKE So in love with everything about this 🥹 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (8-10 servings): Chocolate Chip Cinnamon Crumb Topping: - 3/4 cup (90g) all-purpose flour @Bob’s Red Mill - 1 tsp (4g) cinnamon - 3 1/2 tbsp (52g) granulated sugar - 3 1/2 tbsp (56g) brown sugar - 6 tbsp (85g) salted butter, melted - 1/2 cup (100g) chocolate chips of choice (I used a mixture of semi-sweet + mini chocolate chips) @Nestlé @Nestle Toll House @Nestlé USA Brown Butter Chocolate Chip Loaf Cake: - 1 3/4 cup (225g) all-purpose flour - 1 1/2 tsp (7g) baking powder - 1/2 tsp (3g) salt - 1/2 cup (113g) salted butter - 3/4 cup (160g) granulated sugar - 2 eggs, at room temperature - 1/2 cup (120g) greek yogurt, at room temperature (sub: sour cream) @FAGE - 1/2 cup (120ml) milk of choice, at room temperature - 2 tsp (8g) vanilla extract - 1 cup (200g) chocolate chips of choice (I used 1/2 cup semi-sweet chocolate chips + 1/2 cup mini chocolate chips) Instructions: Preheat the oven to 350F. Grease and line a standard (9x5”) loaf pan with parchment paper; set aside. Start by browning the butter for the cake. Add the 1/2 cup butter to a saucepan over medium-high heat. Allow to melt and slightly brown (~5 minutes). Remove from the heat and immediately pour into a large bowl. Set aside to cool slightly. While the brown butter is cooling, prepare the crumb topping. In a medium bowl, combine the flour, cinnamon, both sugars, and butter. Mix until it resembles wet sand. Then, mix in the chocolate chips. Place into the refrigerator to chill while you make the rest of the loaf cake. Continue preparing the cake batter. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. Once the brown butter has slightly cooled, add the sugar. Whisk until well combined. Add in the eggs, and whisk until fully incorporated. Then, add in the greek yogurt, milk, and vanilla. Whisk until well combined. Add the dry ingredient mixture to the wet. Use a wooden spoon or spatula to mix until just combined and there are no large clumps of flour, being careful not to over-mix. You can also take a whisk and gently whisk to remove any large clumps of flour! Gently fold in the chocolate chips. Pour or scoop the batter into the prepared loaf pan and spread to even the top. Then, sprinkle the chocolate chip cinnamon crumb topping all over the top. Bake at 350F for 60-70 minutes, until golden and a toothpick inserted into the middle comes out clean. Check the loaf at ~50 minutes; if the top is getting too brown, tent the top with foil. Remove from the oven and let cool in the pan for at least 10-15 minutes. Then remove and transfer to a serving plate or wire cooling rack. 
Slice and serve warm with butter and flaky sea salt, if desired. Паска за рецептом Дарії Цвек🔥 Вихід 4 паски на форму 11 см Або 2 паски на форму 13 см + 1 паска на форму 9 см 🔶ІНГРЕДІЄНТИ Для опари • 200 мл молока • 2 стл цукру від загальної кількості • 3 стл борошна від загальної кількості • 35 г живих дріжджів Для тіста • 5 жовтків • 150 г цукру • 10 г ванільного цукру • 1/4 чл солі • цедра 1 апельсину • 100 г вершкового масла • 500 г борошна • 100-120 г сухофруктів + 1 стл борошна (додатково алкоголь та апельсиновий сік для замочування сухофруктів, я замочувала 50/50) Всі продукти для рецепту купую у @silpo.ukraine 🧡 🔷ПРИГОТУВАННЯ Сухофрукти Сухофрукти промиваємо та заливаємо алкоголем з соком ~ на 1-2 год. Перед додаванням в тісто просушуємо та обсипаємо ложкою борошна. Опара До теплого молока (температура мах 35°С) додаємо цукор, борошно та дріжджі, перемішуємо, накриваємо та ставимо в тепле місце на 10-20 хв. Має утворитися пінна шапка, це означає, що дріжджі спрацювали. Тісто До жовтків додаємо залишок цукру, ванільний цукор, сіль, апельсинову цедру і вінчиком розтираємо до однорідності. Повертаємось до опари, додаємо до неї перетерті жовтки і починаємо частинами всипати просіяне борошно та замішувати трохи липкувате тісто. Тепер вводимо мʼяке вершкове масло та продовжуємо заміс не менше 20 хв до еластичного стану, як на відео. Тісто повинно стати дуже приємним в роботі, а щоб було легше працювати, руки та поверхню можна змастити олією. Наприкінці додаємо сухофрукти і ще раз ~5 хв вимішуємо тісто до гладкості (тут також руки змащуємо олією), перекладаємо в миску, змащену олією, накриваємо плівкою і ставимо в тепле місце на 1-2 год. Коли тісто збільшиться в обʼємі min в 2-3 рази, ділимо його на рівні частини, формуємо кульки та розкладаємо по формах (форми заповнюємо не більше 1/3 висоти). Накриваємо плівкою, рушником і ще раз залишаємо підходити ~на годину. Духовку нагріваємо до 200°С, ставимо паски та зменшуємо температуру до 160-170°С. Перші 5 хв випікаємо з конвекцією, після змінюємо на режим верх-низ (або лише верх-низ, якщо ваша духовка гарно пече). Загальний час в духовці 30-45 хв. Свої випікала 35 хв. Готовність перевіряємо деревʼяною шпажкою, має бути суха. Якщо верхівки пасок починають швидко румʼянитись, накрийте фольгою. Але бажано перші 20-25 хв духовку не відкривати 🙌 Готові паски охолоджуємо та декоруємо. Це рецепт класичної паски на 1 кг борошна від відомої української кулінарки Дарії Цвек. BROWN BUTTER SOURDOUGH BANANA BREAD Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (makes 1 standard 9x5” loaf): Brown Butter Sourdough Banana Bread: - 1/2 cup (113g) salted butter - 3/4 cup (180g) brown sugar - 2 eggs, at room temperature - 1 tsp (4g) vanilla extract - 1 1/4 cups (295g) mashed ripe bananas (2-3 large bananas) - 1/2 cup (140g) sourdough discard, at room temperature [substitution: 1/2 cup (115g) greek yogurt, in addition to the other 1/2 cup in the recipe] - 1/2 cup (115g) greek yogurt, at room temperature (substitution: sour cream) @FAGE - 2 1/2 cups (315g) all-purpose flour @Bob’s Red Mill - 1 tsp (5g) baking soda - 1/2 tsp (2g) baking powder - 1 tsp (3g) cinnamon - 1/2 tsp (3g) salt - 1 cup (200g) chocolate chips or chunks of choice @Nestle Toll House - Flaky sea salt, for serving Instructions: Preheat the oven to 350F. Fold in the chocolate chips. Pour the batter into the prepared loaf pan, and top with more chocolate chips/chunks if desired. Then, take a butter knife and score a long line down the middle of the batter lengthwise. This creates the ‘perfect’ seam while baking. Bake at 350F 60-65 minutes, until golden brown and a toothpick inserted into the middle comes out clean or with moist crumbs. Let cool for 5-10 minutes in the pan. Then remove from the pan and transfer to a serving plate or wire cooling rack. Slice and serve warm with butter and flaky sea salt, if desired.
