🍠Honey Buffalo Stuffed Sweet Potato (68g Protein) 674 Calories | 68g Protein | 44g Carbs | 25g Fat Here's one of my favorite recipes that is delicious and extremely simple to make: Ingredients: -1 medium-large sweet potato -1 chicken breast (about 6–8 oz) Seasonings & Sauce: -Salt (to taste) -Black pepper (to taste) -Garlic powder (1/2 tsp) -Buffalo sauce (2–3 tbsp, plus extra for topping) -Raw honey (1/2–1 tsp, optional) Toppings: -Fresh cilantro, chopped (1–2 tbsp) Avocado, sliced (1/4–1/2 avocado) Low-fat shredded cheese (1/4–1/3 cup) Directions: 1) Cook sweet potato (microwave 10 mins or bake 400°F for 45–60 mins). 2) Boil or Instant Pot chicken breast, then shred. 3) Mix shredded chicken with buffalo sauce, honey, garlic powder, salt, pepper, and cheese. 4) Fill sweet potato halves, then broil 2 mins until golden. 5) Top with cilantro, avocado, and extra buffalo sauce.
